Spinach Smoothie

Hear me out on this spinach smoothie, I promise this is not your average green drink. My BFF Ali shared this recipe with me last summer while visiting her in AZ and it has become a weekday breakfast staple for us. And sometimes a Sunday night treat as well. It's so incredibly simple, 3 ingredients!!! Not to mention very healthy, ~210 calories per serving. And it is soooo good. I can't stress this enough, IT IS REALLY GOOD. I even trust BD to blend this up, it's that easy. Did I mention that it tastes really good? And that it's healthy? I've shared this recipe with lots of friends and family, even my young women, and they have all loved it. Don't let the bright green color throw you.

Spinach Smoothie
  • 3 oz fresh spinach
  • 1/2 cup pineapple coconut juice
  • 1 banana
Blend juice and spinach together. Add banana. Optional: add 1/2 cup ice. Makes one serving.
Smoothie Tips:
  • always add your liquid first
  • use frozen bananas for a creamy texture (slightly defrost before blending)
  • yep, the Blendtec is worth every penny 
  • get yourself some bendy straws for more drinking pleasure

we have made this nearly every day since you shared the recipe at bunko. we all LOVE it. i crave it, i need it. nash calls it "green drink" and asks for it all the time. both kids fight over it and scream at me unless i share. it's a definite winner! thanks gina & ali!

i can't totally take credit for this one (dang it). the credit really goes to my super healthy mother-in-law! Either way...it's the best green drink out there! yum

Your blender ROCKS! I make this all the time now and it's never that smooth and pureed.

Kami, that's a really good question! I was curious myself so I priced it all out this morning.

Banana at $.59/lb, 1 large banana weighs about 7oz (or .43 of a lb) = $.25

Spinach at $3.99/lb (Earthbound Farm baby spinach from Costco), 3oz (or 85 grams) = $.75

Juice at $2.59/32oz jar (always cheaper at whole foods/sunflower market), 1/2 cup or 4oz = $.32

Total price per smoothie = $1.32! Which I suppose is more expensive than a bowl of Cocoa Pebbles :)
Also, BD can you please check my math? It's never been my strong point.

I needed this sooo much. Me and my tummy thank you! Gluten and I don't get along, and breakfast is the hardest. I've eaten Oatmeal everyday for the last month and it was getting old. Super yummy!

Math looks good. We might need to discuss rounding, but that's negligible in this case :-)
